This Lemon Raspberry Donuts recipe makes making doughnuts at home easy so you never have to buy them from the store again! These donuts are the perfect combination of lemon and raspberry, they will be your new favorite! These lemon raspberry donuts scream spring!

Remember when I bought that gigantic bag of lemons from Costco and needed something to use them in? I am still working my way through this list of mouthwatering ways to use lemons but I also decided to make some new recipes too.

It has been awhile since I broke out my donut pans so I decided to make some lemon raspberry donuts to kill two birds with one stone!

These donuts are the perfect combination of bright lemon flavor and the sweetness of raspberries. I’ll admit to eating one or two before I added the glaze but, once that glaze was on the donuts, I had to hold myself back from eating them all. They were just so good. The perfect recipe for spring!

Ingredients for Lemon Raspberry Donuts:

1 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 cup granulated sugar
2 Tbsp unsalted butter
1 large egg
1/2 cup + 2 Tbsp milk
2 tsp lemon juice
1/3 cup raspberry preserves
1/4 cup chopped raspberries (optional)
GLAZE:
1 cup powdered sugar
2 tsp lemon juice
1-2 Tbsp water
1 tsp lemon zest

Let’s Make It:

1. Preheat oven to 350 degrees. Lightly spray donut pans with nonstick cooking spray. Set aside.

2. In a large bowl, combine flour, baking powder, baking soda and sugar.

3. Melt butter in a small bowl. Add egg, milk and 2 tsp lemon juice. Stir well.

4. Add wet ingredients into dry ingredients and stir to combine. Spoon into donut pan wells.

5. Heat preserves for 10-15 seconds in microwave. Stir well. Drop by teaspoons into donut batter and swirl. Add chopped raspberries if using.

6. Bake donuts for 10 minutes in preheated oven. Remove from oven and let cool for 2 minutes in pan. Transfer to wire cooling racks and cool completely.

7. In a medium bowl, mix powdered sugar, 2 tsp lemon juice, 1 Tbsp water and lemon zest. Stir well. Add additional water, by the teaspoon, until glaze is desired consistency. Dip donuts into glaze and return to cooling rack to let glaze set.

I loved the combination of lemon and raspberry in these donuts. If you prefer a little less tartness from the lemon, you can reduce or eliminate the lemon juice in the glaze. Just replace it with water so your glaze isn’t too thick.
