Mushroom coffee is an adaptogenic drink with anti inflammatory compounds. The rich flavor of coffee complements the earthy sea like tone of lions mane mushrooms. Paired with your sweetener or creamer of choice, this coffee is packed with health benefits.

Lion’s mane coffee is a fun and tasty way of enjoying this unique medicinal mushroom. Lion’s mane mushrooms are not just relegated to being used medicinally, however. They are also amazing culinary mushrooms with rich flavor, a firm texture, and are great in a wide variety of recipes.

Where to Get Lion’s Mane:

Lion’s mane mushrooms are a unique culinary and medicinal mushroom that grows native in North America and much of Europe. You may be able to find these mushrooms, as hedgehog mushrooms, pom pom mushrooms, or monkey’s head mushroom, at a health food store. If you are fortunate, you may have lion’s mane growing wild in your area. Lion’s mane is a very unique mushroom and is one of the safest ones to forage, as it has no poisonous lookalikes.

You can also grow your own lion’s mane mushrooms with a grow kit, or by seeding your own mushroom logs. Growing your own can give you more confidence than foraging for them. If you grow your own, you will need to dry your mushrooms before proceeding with this recipe. You can learn how to dehydrate and powder your lion’s mane mushrooms here.

Why Lion’s Mane Mushroom Coffee?

This lion’s mane coffee combines the flavor profiles of your favorite coffee with the unique flavor of lions mane, and the flavor and health benefits of cinnamon and cardamon. Cardamon is traditionally used in Turkish coffee, and the additional flavor that it adds is unique and delicious.

The lions mane and cardamon both serve to moderate the bitterness of the coffee. So if you are sensitive to the bitterness and acidity of regular coffee, this blend may be less irritating. I find that this coffee doesn’t need any additional sweetener or creamer to be delicious.

Once the blend is prepared, you can make up your cup of coffee in whatever manner you wish. I like using a mocha pot, but you can use a French press, drip coffee maker, reusable and refillable coffee pods, or even cold brew technique.

You can add milk or sugar, if desired.

I find that the cinnamon adds a hint of sweetness to the coffee and the lion’s mane mushroom reduces the bitterness, so that this medicinal coffee really doesn’t need sweeteners, milk, or creamer. However, a bit of maple sugar does go well with this blend.

Compared to commercial mushroom coffee this blend is a bit different. Instead of using a pre-made mushroom extract, you are using the whole mushroom. You might expect this to add a strong mushroom flavor to the coffee, but while trialing different ratios I found that the coffee flavors blended into the mushroom ones without too much distinction. The cinnamon also helps meld the flavors, and adds some additional smoothness and sweetness to the blend.

This does make an exceptional iced coffee.
