We clearly love Longhorn Steakhouse here at Simply Side Dishes– such as their broccoli recipe, and today we’re bringing another copycat of one of their popular side dishes – rice pilaf.

This rice pilaf is cooked until fluffy and then pan fried for some added crunch. We love the addition of the finely diced red peppers – and the flavor is fabulous!

Why I love this recipe

This is a family favorite recipe and for good reason! Not only is is easy to make and super delicious- it is family and kid friendly! Our kids love when we make this and there are rarely leftovers.

It is also such a good side dish to add to just about any main dish. When we are in need of another add-on to our meal- it is our typical go-to!

The main difference between “rice” and “rice pilaf” is the cooking technique.

While chicken broth is preferred you could also use vegetable or beef broth for making this recipe.

Ingredients

1.5 cups dry white rice

2 cups chicken broth

2 tablespoons Olive or Avocado Oil

1/4 cup finely diced red pepper

2 tablespoon finely disced onion

1 Tablespoon parsley

Salt and pepper, to taste

Our recipe does call for the rice to be cooked in chicken broth- so be aware that if you use leftover rice that was cooked in water- it might affect how close the taste compares to Longhorn Steakhouse.
